Gratitude Post

It is Thursday, the last day of this month. Time runs so fast if you think of it. I feel tired today but I have to go to work. :-( I want to share some things that made me feel blest and happy. I got my extra money from Sponsoredreviews.I really want to thank them for giving me opportunities to earn extra money. I am happy to be working with you, guys. I would also like to express my gratitude to my very good friend, Belle. Without her, I wouldn't be doing this blog thing. She gave me the codes for arranging my link list. I was very happy about it, though, I still need it to get organized. By the way, I am so thankful to my husband. The pc that I am using right now, without it I won't be able to do this blog. hehe (I know this is kinda funny!) Above all, I want to thank God for His continuing love and guidance. sauteed spinach

This was my lunch today. They were all vegetables. I just love vegetables. I had sauteed spinach, rice, pickled sliced cucumber, and vegetables salad. For sauteed spinach: Sauté garlic and onion until golden brown. Then I added organic baby spinach until it got soft and cooked. I was careful to not overcook it. For pickled cucumber: I peeled cucumber and sliced it into thin slices. Then, I put a little of distilled vinegar and balsamic vinegar. I added a tiny pinch of brown sugar to add taste.

I had a healthy and wholesome lunch!!! Yummy!!!

The Tinker Bell in the space

I grabbed this photo from Interspace news. The image was released on Dec. 21 last year. Astronomers found an eye-catching extraordinary case in the outer space using adaptive optics on the European Southern Observatory’s (ESO) Very Large Telescope (VLT). They named it as "Cosmic Bird" or "the Tinker Bell Triplet". It is composed of two massive spiral galaxies and a third irregular galaxy.I always like outer space subjects. It reminds me of when I used to teach in one of the universities in my homeland before. A third irregular galaxy is often chaotic in appearance. It kinda looked like a dragon fly at the first time I saw the photo. I am astonished by God's mysterious works in the entire universe.

Picture of the day - MGM Lion Statue

The MGM Lion Grand. I took this picture on September 18, 2006 on my honeymoon with my good husband in Vegas. We drove by there and I captured a great picture of the MGM Lion statue. The statue is 45 feet tall and 50 feet long and weighs 50 tons. It is made of Bronze metal.

This morning, I excitedly went to check my gmail and saw an approval notice from blosgvertise. Great! I was so glad that my blog was approved. I was a bit nervous about it considering my site was just less than 3 months but I have a good page rank so I think that helped me. I thanked God for that. Tips for Positive Mental Health

Living mentally healthy is one our of the goals in life. We are try to focus more on our physical health. And yet, we take our mental health for granted sometimes. Here are the tips that I learned from wellscotland health info.

Tips for Positive Mental Health:

1. Talk about your feelings
2.Write down whatever is troubling your mind
3. Keep active
4. Eat well (fruits and vegetables)
5. Sleep well (aim 8-hour sleep)
6. Keep in touch with friends and loved ones
7. Get the knowledge, take control- Gathering information also allows us to explore the different treatments and therapies that are available and decide how we want to move forward.
8. Change your lifestyles (from complex to simple)
9.Change of scene can help improve our mood, clear our heads and make it easier to see negative or troublesome thoughts for what they are.
10. Avoid caffeine or stimulant drugs
11. Change our thinking, our mood changes with it. Spot and Stop damaging thoughts

Biko



Biko is a Filipino dessert.I had this biko (shown above) on Christmas day. But I forgot to post this picture on my blog since then. It was given by one of my Filipino friends here in my place. It was really yummy. For those who want to know how to cook biko, here is the simple recipe:

4 cups of sweet rice ( sticky) or more (it depends on your preference)
1lb. brown sugar
2 cups coconut milk
condensed milk ( topings, optional)

Cook the rice in the rice cooker while waiting boil the coconut milk and mix with the sugar. Keep stirring until it gets very sticky. Scoop some juice for topings. mix with the rice. Leave it for 15 mins. on the pan or bake it, if you want ( 20 mins.) then put the toppings. Enjoy it with hot coffee or hot chocolate.

vegan/vegetarian taco


I had Taco for lunch today. Being a vegetarian, I had tofu instead of meat. I sliced tofu into tiny cubes and fried them until golden brown. Then I added seasoning salt and ground pepper. Aside from that, I prepared guacamole. I put a few squeezes of lime and tiny slices of onion to avocado. I mashed it and put a tiny pinch of fine sea salt. It turned out really yummy. I boiled slices of onion with seasonings until the onion was transparent. I strained the water or broth from the onion. I prepared tomatoes, the taco tortilla, lettuce, salsa, vegetarian cheese and vegan sour cream. I enjoyed a healthy and yummy lunch today!

By the way, I didn't have any cilantro on my taco because I don't like its taste.

Rush

I can’t get the song “Freewill” by Rush off my mind right now. I just love that song. I didn’t know about the Rush band when I was still in the Philippines until I saw their concert at Coors Amphitheater here in San Diego last year. I probably heard their songs on the radio before but maybe I didn’t really care. My husband is a big fan of Rush and of course, he really enjoyed the concert at that time. I did enjoy too. The place was crowded with many fans. From then on, I began to like their songs. Rush is a Canadian band consists of three great musicians, Geddy Lee (vocalist), Alex Lifeson (the guitarist) and Neil Peart (drummer). Imagine, there are only three in a group. I know there are some groups comprising of three musicians like the popular band Nirvana. But Rush has its own style of music. The vocalist does the bass guitar and the keyboard “ the synthesizer” using his foot. Their style is from hard rock to progressive rock. However, I consider Neil Peart as one of the greatest drummers in the history of rock. He plays drums very good with his own style. Check out this song from Rush:

I don't really believe in luck. Destiny is the result of what you do in the present. But for information and fun's sake. I will share the good luck traditions that my parents always do on New Year.

*They collect 13 fruits in circular shape. That signifies abundance of money in the whole year round.
*They put coins in their pockets.
*They make some desserts and have candies and chocolates on the table. That signifies abundance of food.
*When midnight strikes, they open everything in the house including the cabinets, drawers, refrigerator, tv, stereo, all lights are on, etc. That signifies that we receive more blessings from God.

my weirdo personality:

*When I have my break time at work, I usually hang out in my car, not in the break room.
*I'd wash and rinse my hands every now and then, especially, when I'm at work.
*When I eat cooked chicken, I'd also want to eat the soft bone. I enjoy chewing it.
*I changed the background of my blog site a bunch of times.
*I can't poop in other's place, I have to hold it until I get home.
*I feel like that I can't live without any tissue paper whenever I go out.
*And lastly, I only want to tag two persons, not seven which was stated above on rules. haha
That's all. I still have a bunch of weirdness in me. But I can only share 7 of my weirdness. Isn't it weird?
