vegan/vegetarian taco


I had Taco for lunch today. Being a vegetarian, I had tofu instead of meat. I sliced tofu into tiny cubes and fried them until golden brown. Then I added seasoning salt and ground pepper. Aside from that, I prepared guacamole. I put a few squeezes of lime and tiny slices of onion to avocado. I mashed it and put a tiny pinch of fine sea salt. It turned out really yummy. I boiled slices of onion with seasonings until the onion was transparent. I strained the water or broth from the onion. I prepared tomatoes, the taco tortilla, lettuce, salsa, vegetarian cheese and vegan sour cream. I enjoyed a healthy and yummy lunch today!

By the way, I didn't have any cilantro on my taco because I don't like its taste.

Rush

I can’t get the song “Freewill” by Rush off my mind right now. I just love that song. I didn’t know about the Rush band when I was still in the Philippines until I saw their concert at Coors Amphitheater here in San Diego last year. I probably heard their songs on the radio before but maybe I didn’t really care. My husband is a big fan of Rush and of course, he really enjoyed the concert at that time. I did enjoy too. The place was crowded with many fans. From then on, I began to like their songs. Rush is a Canadian band consists of three great musicians, Geddy Lee (vocalist), Alex Lifeson (the guitarist) and Neil Peart (drummer). Imagine, there are only three in a group. I know there are some groups comprising of three musicians like the popular band Nirvana. But Rush has its own style of music. The vocalist does the bass guitar and the keyboard “ the synthesizer” using his foot. Their style is from hard rock to progressive rock. However, I consider Neil Peart as one of the greatest drummers in the history of rock. He plays drums very good with his own style. Check out this song from Rush:

I don't really believe in luck. Destiny is the result of what you do in the present. But for information and fun's sake. I will share the good luck traditions that my parents always do on New Year.

*They collect 13 fruits in circular shape. That signifies abundance of money in the whole year round.
*They put coins in their pockets.
*They make some desserts and have candies and chocolates on the table. That signifies abundance of food.
*When midnight strikes, they open everything in the house including the cabinets, drawers, refrigerator, tv, stereo, all lights are on, etc. That signifies that we receive more blessings from God.

my weirdo personality:

*When I have my break time at work, I usually hang out in my car, not in the break room.
*I'd wash and rinse my hands every now and then, especially, when I'm at work.
*When I eat cooked chicken, I'd also want to eat the soft bone. I enjoy chewing it.
*I changed the background of my blog site a bunch of times.
*I can't poop in other's place, I have to hold it until I get home.
*I feel like that I can't live without any tissue paper whenever I go out.
*And lastly, I only want to tag two persons, not seven which was stated above on rules. haha
That's all. I still have a bunch of weirdness in me. But I can only share 7 of my weirdness. Isn't it weird?

Welcome 2008

Happy New Year everyone! Goodbye 2007 and Welcome 2008!I was really looking forward to this new year for a new opportunities and blessings from God. I have some big plans and goals. Time runs fast.
